Spices Export from India: Quality and Sourcing Guide

Source turmeric cumin chilli cardamom coriander and black pepper with a practical process for specifications sampling testing and shipment approval.

Buy against measurable specifications

The grade name is only a starting point. A useful specification states the physical chemical and microbiological parameters that matter to the destination and final use. For whole spices this can include size density moisture foreign matter color and infestation. For powders it can also include mesh size volatile oil active compound and microbiological limits.

Use product specific terms. Black pepper may be purchased by density and berry size. Chilli is commonly compared by pungency and color. Turmeric buyers often specify curcumin and moisture. Cumin and coriander offers should state purity and cleaning method.

Verify processor capability and traceability

Review the processor's registration food safety system cleaning line pest controls metal detection allergen handling and lot traceability. Ask the supplier to trace one finished lot back to raw material intake during the audit.

For ground spices confirm whether milling and steam treatment are performed at the same approved site. Outsourced processing creates another control point and must be covered by the supplier approval system.

Use representative sampling and the right tests

Testing only works when the sample represents the shipment. Define who draws the sample when it is drawn how increments are combined and which sealed reference samples each party keeps.

The Spices Board lists quality evaluation parameters including aflatoxins moisture microbiological organisms heavy metals color value capsaicin curcumin and foreign matter. Select the panel for the product and destination. Do not assume that one generic certificate of analysis covers every market.

Control packaging and container conditions

Use food grade inner liners with packaging selected for the spice's oil content and moisture sensitivity. Confirm bag weight pallet pattern and label information. Powdered spices require stronger moisture and odor protection than many whole spices.

Inspect the container for water ingress odors residue and structural damage before loading. Use dry compliant pallets where needed and place desiccants according to the route season and packaging system.

Approve the lot before loading

The final release file should connect the purchase specification approved sample production lot inspection report laboratory report packing list and container seal. Any waiver should be written and approved by the buyer before loading.
